Almost Forgot...

Since today was a wash-out as far as the patio goes, I decided to stay in and do some baking :).

I started by making a double batch of pancakes for breakfast.  Since pancakes freeze really well, I've started making double batches at a time and freezing the extras for quick breakfasts during the week.  Pancakes are our son's absolute favorite breakfast, so having them on hand usually means a happy boy in the morning, and a happy boy usually means a smoother morning.  Here's the recipe I use, if you're interested.

It's also been a couple weeks since I've made bread, so making another batch was a must today.  And after learning the proper way to knead the dough, I was really excited to see if I could make bread that was comparable to store-bought loaves.

You see, the bread I've made so far has been really good, but really dense, and our boy won't eat it, so that kinda defeats the purpose of making it at home.  I've been learning as I go with this whole thing, but each loaf I've made so far has always ended up way too dense.  Looking back, it makes a lot of sense, but if you don't know how to properly knead the dough, you don't realize you're doing anything wrong.

I don't have any pictures of the process still (I promise I'll take some next time!), but here are some of the end result.  Here's definite proof that properly kneading the bread is the key to a light and fluffy bread:
